The One Above All

Whenever I visit The Ritz-Carlton, Hong Kong, the noise of the city seems to fade away. A sense of calm fills the air as you ascend to the highest point in Hong Kong, where, on the right day, the clouds drift just above you. Even after visiting numerous times over the years, the experience has never lost its sense of wonder. Every visit still feels just as magical as the first. The restaurant I find myself returning to most often is Tin Lung Heen. As of the time of writing, it is widely regarded as the highest Chinese restaurant in the world — a distinction that certainly adds to its appeal. Yet what keeps drawing me back isn’t just the spectacular location or the cuisine; it’s the people. They are the heart and soul of this restaurant, and they make every visit feel genuinely special. The moment I arrived, I was warmly welcomed by the hostess and shown to my table. Looking out through the floor-to-ceiling windows, I was once again captivated by the breathtaking sunset over Hong Kong. Despite having dined here many times over the years, that view never loses its magic. It is a reminder of why every visit to Tin Lung Heen feels like an occasion in itself. With the Mid-Autumn Festival approaching, I had the opportunity to see the seasonal offerings the team had prepared. Edwin kindly walked me through this year’s mooncake collection and beautifully curated tea gift sets, while Amanda, the restaurant’s tea sommelier, shared the inspiration and craftsmanship behind the tea selection. It was evident that a tremendous amount of thought and care had gone into every detail, making these gifts feel just as refined as the dining experience itself. For dinner, we chose the baked cod with cheese, marinated chicken in soy sauce, and the double-boiled chicken soup with fish maw served in a young coconut. Each dish was beautifully presented and executed with remarkable precision. The cod was rich and perfectly flaky, the soy-marinated chicken was wonderfully tender and full of flavour, and the soup was comforting, delicate, and deeply satisfying. To end the evening, we enjoyed the baked egg custard tart, which was the perfect finale. Freshly baked with a crisp, buttery pastry and a silky-smooth custard filling, it was simply outstanding. Every dish reflected the level of craftsmanship and attention to detail that has made Tin Lung Heen one of my favourite Cantonese restaurants. The consistency is remarkable, and it is one of the many reasons I always look forward to returning. As a Marriott Lifetime Platinum member, it is especially rewarding to earn Marriott Bonvoy points while dining at a restaurant I genuinely enjoy. It’s a small but meaningful bonus that makes each visit even more worthwhile. To conclude the evening, the team surprised us with a thoughtful souvenir—a beautifully presented blooming tea that unfurls into a flower when steeped in hot water. It was a fitting reminder of the care and attention to detail that define the Tin Lung Heen experience. Finally, I would like to thank Edwin, Mike, and Amanda for looking after my wife and me throughout our visit. Their genuine hospitality, warmth, and passion made the evening truly memorable. Phenomenal stay

Starting off, the room was massive and luxurious - there was a telescope and a phenomenal view. Don’t get me started about the service - the kindest hotel staff I have ever seen. They handed me two coins for the ball toy vending machine in the buffet restaurant. Derek was fantastic. Absolutely no cons - best hotel of all time!

Nice lunch at Tin Lung Heen

Had an absolutely wonderful dining experience in Tin Lung Heen celebrating the birthday of my family. Special thanks to Anson and the wider team in making it a truly heartwarming and special occasion for us. Great menu design and food is undoubtedly top notch, even to a locally born and raised this is still one of the best Chinese/Cantonese meals in years. Service is warm and feels cozy throughout the meal. Simply impeccable - can’t wait to come back

Oh what a night!

Fabulous birthday dining experience. The staff (Milena and Edmond to name but two) were outstanding in anticipating our requests and taking care of our evening from start to finish. We had a lovely table at the window but, unfortunately a family behind us was more excited by their mobile devices than the Michelin Star meal, making the restaurant compete with loud cell phones and IPads. So sad. We were moved to an even better table and enjoyed our evening very much. Many thanks for understanding and helping us navigate that uncomfortable portion of the night. We will be back for more!
